Turkey sausage, spinach, peppers, tomatoes and mozzarella cheese stuffed in a portobello mushroom and baked in the oven  and served with a side of snap peas.

Your choice of white or dark meat, peppers, onions and tomatoes marinated in spices and yogurt and served with brown rice

Chicken which is braised in pinot noir with carrots, onions and mushrooms

Thai Style Chicken with Basil

Mild stir fried chicken served with rice and cabbage salad.

Chicken Picatta with Lemon and Capers with a side of Risotto

Chicken Breast pounded thin, sautéed in a combination of butter and olive oil, to which garlic, capers, lemon zest, lemon juice and white wine is added. The risotto is made with red peppers, garlic and broccoli.

Feta and Caper topped Salmon with Green Beans and Wild/Brown Rice

Salmon topped with a combination of feta, capers, lemon zest and panko bread crumbs, which is baked in the oven with green beans and wild/brown rice.

Spinach and Cheese Lasagna

A combination of spinach and ricotta cheese are layered in between the lasagna noodles and cooked in a rich tomato sauce

Oven Roasted Vegetable Tostadas with Chipotle Cream Sauce (vegetarian)

Seasoned vegetables roasted in the oven and served with tostadas and a creamy chipotle sauce on the side. 

Pork Tenderloin with Apples, wild and brown rice and roasted broccoli

Oven baked pork tenderloin with apples cooked in brandy, wild and brown rice and oven roasted broccoli

Beef Bulgogi with Rice and Kimchi  (lettuce taco)

Thin slices of beef which has been marinated in soy sauce and garlic, sautéed and served with a side of steamed rice and kimchi and lettuce leaves.

Fish Florentine with risotto

Fish filet stuffed with spinach and cheese, rolled and baked with a light cream sauce and served with a side of  orzo.


Greek dish made with seasoned ground lamb, eggplant and  pasta with a creamy bechamel sauce. (ground beef may be substituted)

Wild Rice and Chicken Chowder

Wild and brown rice cooked in a flavorful broth with bell pepper, corn, carrots and chicken.

Chicken and Sausage Gumbo

Made with chicken breasts, turkey kielbasa, and served with steamed rice. (Let me know if you would like Okra in it, I do.)
