Spinach Salad with Dates and Lime Vinaigrette


This is a super easy salad dressing. I like the tartness of the lime with the sweetness of the dates. They pair well together. You can whip this up in no time. This salad would be great with some grilled fish.

Ingredients: serves 4

Dressing:

2 pitted Dates

1 t grated Lime Zest

1/4 c fresh Lime Juice

1/3 c mild oil

S & P to taste

Put the above ingredients into a mini prep or blender and blend until emulsified. Set aside.

Salad:

6 c Spinach

3/4 c Dates, chopped

4 Shallots, thinly sliced

3 T mild oil

Heat the oil in a shallow frying pan. Toss in the shallots and cook until brown. Remove and drain on a paper towel.

Toss spinach and chopped dates with some of the dressing. Plate and top with some of the crispy shallots.
