Cornish Hen w/ Madeira Mushroom Sauce

This is ideal for an elegant dinner party. The sauce may be prepared early and gently reheated later. The hens may be prepped earlier in the day or the day before and just kept in the refrigerator. The sauce is balanced by the earthy mushrooms and the smooth flavor of the Madeira. I used sage with this dish because I like the flavor it imparts on the hens and in the sauce. I chose to serve this with some mushroom ravioli and a simple Caesar salad to start. This is a great salad since you can change the vary the ingredients. The dressing is very simple, it's only there to enhance the vegetables. When making this be sure to use a variety in order to make it pleasing to the eye. Here it is....helping you to get lean in 2018. Quinoa Cookies w/ Almonds and Cherries

I decided to make cookies today and looked in my pantry to see what was available. Since quinoa tends to have a slightly bitter flavor I added some dried cherries and 1 tablespoon of pure maple syrup. The almonds add a nice crunch. I decided to keep them vegan, therefore instead of adding an egg I used chia seeds. If you don't have them then please use an egg or egg white. Here it is...
