
Healthy & Quick Weeknight Meal
It's great to be able to make a delicious and healthy meal in a short time. My usual meat in this case is chicken. We prefer thighs because they have more flavor. To save time I buy the skinless/boneless thighs and clean the fat off of them. Since it is winter I chose some earthy side dishes such as roasted mushrooms and a mixed greens gratin. I brightened up the flavor with some lemon zest and juice and fresh thyme. hope you enjoy this. Ingredients: (serves 4) leftovers

Goat Cheese Stuffed Chicken Breast w/ Smokey Chickpeas (memories of Spain)
Here is another healthy meal with a lot of flavor. The stewed chickpeas with smokey paprika remind me of my student days in Spain. I like to serve this dish with a simple salad and a glass of red wine. In this recipe I added some chopped Kalamata olives for some saltiness but you can add whatever you like, such as sun-dried tomatoes, sage and raisins, a different soft cheese with an assortment of herbs, garlic and onions. Roasted Vegetables with Parmesan Custard
This is a great 'go to' dish when you are entertaining at home and want to be able to socialize with your guests. It stays warm for a long time, so you can make it early and serve it 3 hours later or simply serve it at room temp. Ingredients: 2 med Eggplants 3 med Zucchini 2 Red Bell Peppers 1 sm. Red Onion 12 Campari tomatoes or 8 med beefsteak tomatoes Fresh herbs, basil, oregano, thyme (about 2 T each chopped), if fresh are not available then 1t each dried Red Pepper Flake
